Lemon couscous

Lemon couscous

Makes 4-6 servings

A light and fluffy accompaniment to any dish this summer or even a light snack at lunch.

 

Ingredients

300g couscous

300ml boiling water

Zest of 1 lemon

Juice of 1 lemon

15g chopped coriander

Pinch of salt 

Method

1. Pour boiling water over the couscous, cover and leave for 10-15 minutes.

2. Using a fork, stir through the couscous to loosen up the grains.

3. Add the rest of the ingredients to the couscous and serve immediately, or store in the fridge for later.
